Saveur Restaurant

Recently on my trip to Victoria I had the chance to sample some French cuisine that I really haven’t had much pleasure of trying in Vancouver. I have to say though Saveur Restaurant is definitely doing a good job at it. “Saveur” translated from French means “Flavour” and they definitely brought a lot of that in the food sampled.

Their “inspired cuisine” take on many different dishes I tasted were both creative and wonderful. My favourite one by far was the cold soba noodles that created great depth of flavour with the miso dressing. Coupling that with the pickled fennel and salsa verde, this really rounded out the whole dish. This made the dish incredibly light and a great amuse bouche.

Another favourite of mine was the “Mushroom Crackling” which was pretty much a cross between rice crisps and the traditional Filipino pork rind snack Chicharron. It had fantastic texture with the kimchi powder that gave the chips unique flavour. Although it was lacking some acid to cut through some of the fatiness of the chips.

Lastly the albacore tuna dish really had some great textures and flavour contrasts. From the fresh seared fish to the broccoli horseradish purée, and mixed with the ponzu gel it brought some traditional flavours of Japan but reimagined in a French style that elevated that dish to a great level with some gastronomy.

I’m curious to see what other flavours and dishes they come up with next. Give this place a try if you’re into French cuisine while visiting Victoria is definitely a must. What’s your favourite French restaurant? Comment below!
